How Should Civet Coffee Be Consumed?

I initially thought civet coffee was just an exaggerated expression, but later learned that this coffee is actually made from coffee beans excreted by civets. The production process is shown in the image above. I wonder how many people can actually drink it. I hear this coffee sells quite well despite its expensive price. Some unscrupulous merchants use various cruel methods to force civets to eat coffee beans just to produce more civet coffee. It's truly shocking.

When you encounter civet coffee, you'll discover that beyond the usual aromas of fragrance, richness, sweetness, and smoothness, there's also a unique scent that once experienced, will never be forgotten.

The civet cat, native to subtropical regions, can be found in Indonesia, the Philippines, and Vietnam. This small creature is omnivorous, particularly enjoying ripe coffee fruits, insects, and fruits. Since civets can only digest the outer pulp of coffee fruits but not the extremely hard coffee beans inside, the beans are excreted. During this process, the civet's stomach acid breaks down proteins in the coffee and eliminates the bitterness, resulting in brewed coffee that's more fragrant, sweeter, and mellower, with a primitive animal aroma—this is the origin of civet coffee.

Civet coffee beans have a unique flavor with a strong earthy taste, extremely thick consistency resembling syrup, and a very special aroma. After drinking, there remains a faint minty cool sensation in the mouth—a "exclusive flavor" not found in regular coffees. It carries honey and chocolate aromas with a sweet, smooth, and rich texture.

Civet coffee is best consumed when ground immediately from whole beans. Freshly ground coffee is much fresher than pre-ground powder. Why? Because oxygen is coffee's worst enemy. Once coffee beans are ground, oxidation accelerates, and the coffee "dies" within an hour, with aroma and flavor diminishing within minutes. Even the most premium and expensive coffees won't deliver their rich flavors if not freshly ground. Freshly ground civet coffee has no bitterness or acidity, with a long-lasting sweet aftertaste that is mellow and delicate.

Special mention: civet coffee should absolutely not be mixed with milk! The reason is that natural civet coffee with milk becomes watery and tasteless, completely masking the coffee's flavor. Also, don't immediately discard the coffee grounds after the first brew—brew it again! Although not as strong as the first brew, it still maintains rich aroma without bitterness.
