The Art and Science of Coffee Roasting
Roasting is the source of coffee flavor. The process of applying fire to raw beans is called roasting. Raw beans cannot be consumed without roasting. After roasting, coffee beans determine about 80% of the coffee's taste. The roasting process is tricky: if the fire is too strong, the outside will be cooked while the inside remains raw; if the fire is too weak, the inside will be overcooked. The key to achieving consistent roasting inside and out is precise fire control.

Green Beans: Colombia Santa Rita Caturra Coffee Beans
These beans have the characteristics of Colombian hard beans: large, uniform, full, and dense in texture. Few defective beans, with a greenish color and high moisture content.
Roasting Amount: 550g
Roasting Review:
1. Room temperature: 30°C
2. Initial heat: 50°C, bean entry temperature: 185°C
3. 1 minute 10 seconds, temperature return point: 102°C, full heat at 150, valve closed to 3
4. 4 minutes 25 seconds, beans show pale yellow color, roasted grain aroma appears
5. 5 minutes 20 seconds, roasting temperature 152°C, heat adjusted to 100
6. 8 minutes, beans fully covered with wrinkles
7. 9 minutes 45 seconds, roasting temperature 183°C, first crack begins, heat adjusted to 80
8. 10 minutes 50 seconds, roasting temperature 186°C
9. Around 12 minutes 10 seconds, first crack nears end, heat unchanged
10. 13 minutes 20 seconds, beans discharged at 203°C, removed from roaster, roasting stops

Used Fujiroyal Fuji electric grinder R-220 with ghost burrs, grind setting 2.5 (machine scale: 10 is coarsest)

Dry aroma is prominent with pleasant sweet fragrance. Coffee aroma is less obvious than dry aroma but relatively fresh, with faint floral notes detectable. Sugarcane flavor is quite prominent in taste, with not much bitterness and relatively clean flavor. However, it lacks richness, with moderate overall body. Good aftertaste with noticeable sweetness and relatively long finish.
Overall, Caturra coffee beans show bright acidity but slightly lack flavor complexity. This might be due to fresh roasting, as the beans are still in the degassing stage.
