The Fascinating Journey of Yirgacheffe Coffee Beans

As for why Yirgacheffe coffee beans have such captivating flavors, with infinite changes from the first sip to the last, this is actually closely related to the processing method that transforms coffee cherries into raw coffee beans.

When coffee cherries ripen and turn red, they are harvested. Then the fruit pulp must be removed, leaving only the seeds, and the moist beans must be dried until they contain only about 12% moisture. This is because the coffee beans are in a stable state at this moisture level, which helps preserve their flavor characteristics and ensures long-term storage of the raw coffee beans.

Yirgacheffe coffee beans have a small, neat appearance with a short, round shape. Through the natural drying process (using natural sunlight to dry both coffee cherries and raw coffee beans), the sugars and essences from the coffee cherry pulp penetrate into the coffee beans. However, the natural processing method lacks two important steps: using water tanks to filter out lower-density defective beans and using pulp sorters to remove unripe cherries. If defective beans are mixed in, it can easily lead to off-flavors or unpleasant tastes!

Fortunately, the local coffee industry is filled with dedicated people. They are extremely meticulous when harvesting ripe coffee cherries, removing unripe green cherries or defective ones. During the natural drying process, they also pick out damaged, moldy, or otherwise defective beans to ensure the quality of the produced coffee beans.
