Yirgacheffe Kochere Coffee Beans
Kochere is located in Gedeo, belonging to the Yirgacheffe region. Kochere borders Gedeb to the east, the Oromia region to the southwest, and Yirgacheffe town to the north. The small towns of Kochere include Fishagenet and Chelelectu.
There are approximately 750 small farmers in the vicinity, with each household owning less than 1 hectare of farmland on average. Each has about 1,500 coffee trees. Most of the coffee is organic, although not formally certified. The cherries produced by each tree ultimately yield 100-200g of green beans. In addition to the original Typica varieties transplanted from the primary forest to farms, there are also some improved varieties. They are generally collectively referred to as Ethiopian heirloom varieties.
The Kochere woreda (district) is very close to Chalalacktu town, located in the southern Ethiopian Yirgacheffe region. Kochere is one of the four sub-districts under Yirgacheffe (Kochere, Yirgacheffe, Gelana Abaya, and Wenago), with elevations ranging from 1,800 to 2,200 meters above sea level. Almost all growing locations are above 2,000 meters, making it one of the highest sub-regions in Yirgacheffe.

Varieties include original Typica transplanted from the primary forest to farms, as well as some improved varieties, generally collectively referred to as Ethiopian heirloom varieties. After cherries are harvested in the mountains, they are transported to washing stations at slightly lower elevations for processing. The washing station processing this coffee pays farmers two to three times more than typical washing stations for their cherries.
The washing station's processing standards are extremely high. First, the fruit's pulp and skin are removed (pulped), then the fruits are placed in water channels for density sorting, eliminating defective beans. This is followed by fermentation, washing, and finally sun-drying on raised beds.
Kochere is a coffee of exceptionally high quality within the Yirgacheffe region, featuring heirloom varieties and iron-rich soil. The coffee exhibits vibrant citrus acidity, floral aromatics, and sweet, silky mouthfeel. Yirgacheffe's distinctive spice notes and complex fruit flavors make Kochere a top choice on coffee enthusiasts' menus.
Kochere Coffee Bean Roasting Analysis
Light roasting enhances the tropical fruit aromatics of Yirgacheffe, making them more pronounced and rich. Upon entry, a subtle apple-like acidity becomes apparent, which actually complements the coffee's body, making the bitterness more aromatic and memorable. Fundamentally, coffee is a fruit, and maintaining fruit sweetness and acidity after high-temperature roasting is precisely what makes Yirgacheffe special.
Roasting machine: Yangjia 600g semi-direct flame
Using a quick roast mode, the drum temperature is set to 200°C when beans are loaded, with the damper at setting 3. After 1 minute, reduce heat to 160°C while keeping the damper unchanged. At 4'50", when the temperature reaches 150°C, the bean surface turns yellow, grassy aromas completely disappear, and dehydration is complete. Adjust heat to 130°C and open the damper to 4.
At the 8-minute mark, ugly wrinkles and black spots appear on the bean surface, and the distinct toast aroma transitions to coffee fragrance—this can be defined as the prelude to first crack. At this point, listen carefully for the sound of first crack. At 8'20", first crack begins. Reduce heat to 70°C and open the damper completely (be very careful when reducing heat—don't reduce it so much that the cracking stops). Remove from the drum at 192°C.
