ETHIOPIA, YIRGACHEFFE, KOCHERE Coffee Beans

In 1995, Ethiopia reorganized its administrative regions. The Yirgacheffe we are familiar with was designated within the Gedeo zone of the new SNNPR region. Currently, Yirgacheffe is located in central Gedeo, with Kochere situated about 25 miles north of the famous Yirgacheffe town. The production model primarily involves local small farmers delivering their batches to cooperatives for unified processing. For a long time, this area has been regarded as one of the finest origins for coffee in southern Ethiopia.

Yirgacheffe is a small town situated at an altitude of 1,700-2,100 meters and has become synonymous with premium Ethiopian coffee beans. This area has historically been wetland, and the name "Yirgacheffe" means "let us settle and thrive in this wetland." It is one of Ethiopia's highest-altitude coffee-growing regions. While Yirgacheffe coffees are typically washed-processed, a small quantity of exceptional beans are intentionally natural-processed to enhance their captivating fruit aromas and body.

Coffee trees are mostly grown in farmers' backyards or intercropped with other agricultural crops. Each household's production is limited, making this typical garden coffee. These mountain villages are shrouded in mist, with spring-like conditions year-round. Summers bring gentle breezes—cool but not hot, rainy but not humid—and winter brings no frost damage. This unique environment nurtures a distinctive "regional flavor" characterized by citrus and floral notes. The so-called "Yirgacheffe flavor" refers to intense jasmine fragrance, lemon, as well as peach and almond sweetness with tea-like qualities.

Traditionally, Yirgacheffe used the most ancient natural processing method. However, in 1972, Ethiopia introduced Central and South American washing techniques to improve quality. This made the jasmine and citrus aromas of Yirgacheffe even clearer and more refined, elevating it to become one of the world's finest specialty coffees. The exquisite washing technology played a crucial role. Since the 1970s, this region has primarily focused on washed processing, becoming Ethiopia's most prominent washed-coffee producing area.

However, in the past two years, Yirgacheffe has broken from tradition, frequently introducing impressive natural-processed beans that have become sensations in the specialty coffee market!

This is a natural-processed Yirgacheffe from the Red Cherry Project, produced in the Kochere region and processed at the Licho processing station. While officially labeled as G3 grade upon import, we found that the defect rate of these green beans rivals that of G1 grade natural coffees on the market. This batch consists of freshly harvested new beans directly from the origin this year, with a remarkable CR score of 93 points.

Through extensive cupping of various micro-batches by the Dutch company Trabocca, the washed Yirgacheffe from the Licho processing station was first discovered, featuring unique honey peach, mango, and stone fruit aromas—showing great potential for natural processing. This batch represents the collaborative effort between the Licho processing station and nearly a thousand surrounding farmers, guided and encouraged by the Red Cherry Project to improve quality. It was carefully selected from numerous Red Cherry Project samples for import.

Although labeled as G3 grade for export, the proportion of unripe/defective beans is remarkably low, truly at G1 level. While the appearance of the green beans may not be outstanding, their distinct ripe fruit aroma is utterly captivating! This is an elegant, refined, yet distinctly natural-processed Yirgacheffe!
