The Guji Coffee Region of Ethiopia

The Guji coffee-producing region in southern Ethiopia spans across towering mountains, highlands, plateaus, valleys, and plains, featuring diverse topography. The area's geology consists of nutrient-rich, well-drained volcanic soil. The region's greatest advantage lies in its soil fertility, which is maintained through the natural cycling of organic matter, using fallen leaves and debris from surrounding trees, as well as plant roots as natural fertilizers. It delivers intense lime and green apple acidity, with high sweetness of peach and plum, caramel and honey sweetness in the aftertaste, and chocolate bitterness as it cools.

Ancient Heritage and Exceptional Quality

Geographically, "Guji" is a small producing region located within "Sidamo." Coffee cultivation has been part of this area's culture since ancient times, combined with high-altitude growing conditions, resulting in first-class quality!

Distinctive Flavor Profile

This is a highly distinctive coffee. The dry aroma of the ground beans reveals wild ginger flowers, jasmine, honey, and malt notes. When hot water is added, the wet aroma presents honey sweetness, more floral notes, some roasted biscuit aroma, maple syrup fragrance, cream, and peanuts (truly remarkable! I scored the aroma very highly). At first sip, it's "sweet" - caramel and honey, "full of floral notes," jasmine and violet, clear and distinct, with gentle lemon acidity, tea-like sensations, and citrus-like sweetness.

Guji's Coffee Classification and Characteristics

The Guji region is quite new, originally classified within Sidamo until it became an independent micro-producing region in 2010. Currently, there are about 850 small farmers in total. Within Guji, the most famous coffee comes from the Shakisso town. Nordic Approach classifies Ethiopian coffee into eight major flavor types, one of which is called "Diima," somewhat similar to Ninety Plus Nekisse N2. Its flavor profile generally features rich texture and red fruit characteristics.

Roasting Experiments

I conducted many interesting roasting experiments. For example, achieving first crack in 5 minutes and dropping the beans at first crack (color card approximately 65 on the bean surface, 70 at the bean center) revealed that at such a light roast level, the texture is excellent without any unpleasant grassy flavors. This represents the superior quality of this coffee itself. Of course, roasting it darker is also quite good, but it's recommended not to enter second crack.

This is a mild-type coffee with unique flavors and floral mouthfeel - "excellent"!
