Ethiopia is one of the world's most renowned coffee-producing countries and the birthplace of coffee. It boasts countless indigenous local varieties and is known as the genetic repository of coffee. This particular coffee comes from the Guji coffee beans of the Sidamo Zone. Both washed and natural processing methods are used locally, and most coffee-growing areas can easily exceed 2,000 meters in altitude. Local farmers typically own only one to two hectares of land and cultivate their coffee naturally without chemical fertilizers or pesticides, harvesting fully ripe coffee cherries by hand.
This batch comes from an Ethiopian exporter with a century of history. It was selected from numerous samples in the local ECX trading system, then purchased and directly exported to Alpha Coffee & Tea. The exporter gave it a beautiful name - Liya. The main flavor profile features bright lemon and citrus acidity, quite clean, with excellent sweetness.
Sidamo Region
Sidamo is located in southern Ethiopia with diverse landscapes, resulting in varied coffee flavors - sometimes fruity and citrusy, sometimes nutty and herbal, with bright acidity. In the past, Sidamo coffee also included Yirgacheffe and Guji coffee beans. However, the ECX trading system has now separated Yirgacheffe and Guji from Sidamo.
The Guji region in southern Ethiopia borders Sidamo and Gedeo zones, featuring towering mountains, highlands, plateaus, valleys, and plains - diverse topography. The region's geology consists of fertile, well-drained volcanic soil with depths of nearly two meters, with surface soil appearing dark brown or brown. The area's greatest advantage lies in maintaining soil fertility through natural organic matter cycles, using fallen leaves and debris from surrounding trees, as well as plant root residues as natural fertilizers.
In recent years, several coffees from the Sidamo and Yirgacheffe regions have been named after their respective cooperatives or estates. Besides hoping to build international recognition and product loyalty under their own names, the fundamental reason lies in the coffee farmers' confidence in their own coffee. They insist on strict procedures throughout every step after harvesting, with excellent performance in both washed and natural processing methods. It's no wonder these farmers have the confidence to promote their products in the international market.
Local farmers in the Guji region manually select coffee cherries with moderate ripeness for natural processing. During the 15-17 day natural process, coffee cherries on drying beds are turned every two hours to ensure uniform and complete drying, after which hulling and packaging are performed. Unlike other natural processing methods in Ethiopia, Ardi coffee is manually sorted before drying rather than after processing is complete. During drying, elevated drying beds are used, which not only increases air circulation but also prevents coffee cherries from absorbing undesirable flavors during the drying process.
