Mexico is one of the largest producers of certified organic coffee. Due to geographical factors, most of it is exported to the United States.
Coffee Industry History
Mexico's coffee industry began in the 19th century, introduced through Jamaica, with primary cultivation of Arabica varieties. The growing region is located in Soconusco, near the Pacific coast bordering Guatemala.
In the early 1990s, the southern state of Chiapas became Mexico's most important coffee-producing region, with an annual output of about 275,000 tons of coffee, accounting for 45% of the country's production.
Coffee Farming Structure
More than two million Mexicans depend on coffee for their livelihood. 75% of Mexican coffee farmers work on land smaller than two hectares. These small farmers produce approximately 30% of the country's coffee annually, while the remainder is produced by large or more productive farms.
Since 1988, particularly in Chiapas, the government has encouraged poor coffee farmers to increase production and expand growing areas to increase income by providing simple loans to farmers and encouraging forest land cultivation.
Chiapas Region Development
Chiapas is located on the plateau at the southern end of Mexico, bordering Guatemala. In 1991, Mexico's National Institute conducted research on systems for protecting the rights of local indigenous peoples and proposed regulations for product trade to enhance protection for native residents.
Under these principles and conditions, cooperative organizations in various districts emerged like mushrooms after rain.
OPCAAC Organization
OPCAAC, whose full name is Organización de Productores de Café de Ángel Albino Corzo, is an organic small farmer production organization in Chiapas state. Founded in 1995, OPCAAC has established farm management systems that emphasize open and transparent independent production and marketing information for coffee farmers, while setting standards to avoid over-development of land.
The organization provides its members with small loans, technical training, social activities, and other assistance, while continuously focusing on the development of organic agriculture and ecological protection.
OPCAAC is committed to sustainable operation, creating value for the local coffee industry, and improving the quality of life for local farmers through fair trade and agricultural production methods that comply with ecological conservation. OPCAAC members use environmentally friendly farming methods to cultivate land, establishing economic and social sustainability through regional organizational development, and enhancing product quality.

Nutty, low acidity, spicy, creamy, slightly cool, herbal, plant-based, smooth and mild.
Mexican Coffee Recipe
Ingredients:
Espresso: 30 c.c.
Water: 90 c.c.
Fruit sugar: 1 oz.
Egg yolk: 1/2 oz.
Green mint liqueur: 1/3 cup
Fresh cream: appropriate amount
Crushed ice: 60 grams
Preparation:
1. Extract 30 c.c. of espresso and add 90 c.c. of water.
2. Cool the mixture from step 1 and set aside.
3. Add fruit sugar to the coffee and stir gently with a bar spoon.
4. Add crushed ice to the glass and pour in the iced coffee.
5. Add egg yolk and top with a layer of fresh cream.
6. Finally, drizzle with green mint liqueur.
