Yemen Mattari Mocca Coffee Beans
The growing region is located in the Bani Mattar area, west of the capital Sana'a. The variety is Mattari (Arabica small bean variety), an ancient Arabica variety that should have been introduced from Ethiopia. The growing environment is in desert oases, irrigated with oasis water, and the natural environment during harvest is dry (the dry period coincides with the harvest season, which perfectly matches the coffee growth cycle). After harvesting, the raw beans are placed on rooftops and processed using the natural sun-drying method, with regular turning of the coffee beans to ensure even fermentation. Due to direct exposure to high temperatures and sunlight outdoors, the fermentation process is intense, but the low temperatures at night slow down the fermentation process, preventing the coffee beans from over-fermenting. The next day's sunlight awakens the coffee beans, allowing them to continue fermenting.
The fermentation in the natural processing method is quite intense, so it generally takes only about 3 days. By approximately the third day, the internal fermentation of the coffee beans tends to become stationary. The natural processing method is the main reason why this particular coffee bean has distinct coffee bean characteristics, and it also produces rich and strong complex flavors that surge in the mouth.
