Coffee Varietals and Challenges

Among Arabica coffees, Typica is the variety closest to the original species, possessing excellent aroma and acidity, but it's susceptible to coffee leaf rust, requires considerable shade trees, which leads to low yields and high cultivation costs. Bourbon is a sub-variety of Typica, with both aroma and body belonging to high quality, but it also shares the weaknesses of rust susceptibility and not-high yields.

Catimor coffee beans are formed by hybridizing the rust-resistant Timor variety with Bourbon mutants, making it a high-yield commercial variety, but its cup quality and mouthfeel are inferior to the previous two. "If the planting varieties are mostly Catimor coffee beans, then from the source, our coffee quality cannot be guaranteed," said Liu Minghui.

Genetic Resource Limitations

This problem cannot be solved in the short term. China's coffee germplasm resource gene bank is located at the Dehong Tropical Crops Research Institute in Yunnan. Although it has 285 germplasm resources, due to long-term insufficient investment, it can no longer produce several new varieties with high quality and yield. In comparison, Colombia's National Coffee Research Center has over 1,100 variety germplasm resources and can continuously provide varieties with strong stress resistance.

Harvesting Challenges

Due to the lack of unified production standards, problems in the harvesting process can also cause secondary damage to coffee beans that were originally of good quality. Unlike Brazil, which uses mechanized production, Yunnan's terrain determines that its coffee can only be harvested manually. Taking the example of three harvest workers needed per mu of land, 1 million mu of land would require nearly 3 million laborers.

In situations where enough cheap labor cannot be found, to reduce costs, Yunnan coffee harvesting mostly does not differentiate, with red and green coffee beans mixed together and harvested all at once.

Post-Harvest Processing

Coffee beans, like tea leaves, easily absorb foreign odors and deteriorate, making post-harvest processing extremely critical. "Being able to guarantee completion of processing within 30 hours is one of the secrets why Colombian coffee quality is far superior to ours," said Yang Zhiqi, Chairman of Lingfeng Coffee.
