Introduction

Nekisse Honey Kiss coffee beans originally come from Shakisso, Ethiopia. This coffee bean was named "Nekisse" from "NAKED nectar from the Shakisso region." It is processed using traditional natural drying methods, placing cherries on high raised beds to dry in the sun, then removing the dried pulp and fruit flesh, and finally sending to Addis Ababa for hulling. The flavor profile at that time possessed very strong berry jam, creamy texture, citrus, and tropical fruits. Later, the growing region was moved to Wellega and Sidama because they discovered that the Sidama region could produce even better floral nectar characteristics.

In 2004, the rise of Panama Geisha sparked a worldwide fervor for seeking excellent varieties. Joseph Brodsky, like other green bean traders, researchers, and enthusiasts, ventured deep into remote mountainous areas of Ethiopia, searching for Geisha varieties in the wild, primitive forests where coffee originated. Although he was not successful in finding what he sought, he believed that among these many native species forests, there still existed many excellent, unknown native varieties. Perhaps they hadn't been discovered due to their remoteness, or perhaps they hadn't been unearthed because they lacked meticulous processing and cultivation. Therefore, the following year, Joseph Brodsky immediately invested significant effort in Ethiopia. He sought valuable coffee bean varieties and collaborated with local estates to improve and refine green bean processing methods, establishing the Profile Processing green bean system to allow each bean to fully express its complete flavor characteristics. In 2009, Joseph Brodsky began planting Ethiopian native Geisha varieties in Panama. He purchased land, created the "Ninety Plus Geisha Estate," and simultaneously built the Ninety Plus Sensory Room. In recent years, they developed the SolkilnTM special processing method. Ninety Plus has continuously innovated in every aspect of green bean processing, leading the way in the specialty coffee market.

Profile Processing System

The Profile Processing system is custom-tailored for each bean variety, covering planting, harvesting, and processing procedures. Through repeated cupping and calibration, it ensures each coffee variety fully expresses its unique fruit flavors.

SolkilnTM Special Processing Method

In 2013, they pioneered the SolkilnTM special processing method, using wood drying chambers to dry coffee beans. After wood is cut, it is typically placed in wood drying chambers where temperature, humidity, and air circulation are controlled and adjusted to reduce the moisture content of green wood beans to 10-12%. Joseph Brodsky applied this same concept to create the new SolkilnTM (SK) special processing method, and in 2013 officially launched two premium green bean products: Lotus Solkiln H2 and Silvia Solkiln N2.
