Colombian Coffee Geography

Three Cordillera mountain ranges run north to south throughout Colombia, extending into the Andes. Local coffee farmers cultivate coffee along the highlands of these mountain ranges, benefiting from diverse climatic production conditions. Due to variations in terrain and altitude, Colombia's coffee industry largely operates on a small-scale farming model.

Colombian Coffee Grading System

Unlike Central American coffee-producing countries that primarily grade by growing altitude, Colombian coffee is classified by bean size (screen mesh). Among these, the Supremo grade, comprising beans of 17 mesh or larger, is the highest classification. The next grade down is EXCELSO EXTRA, which mainly consists of 16 mesh beans.

Cauca Region Coffee Profile

Cauca Province is one of Colombia's renowned specialty coffee producing regions, situated between 1,758 and 2,100 meters above sea level. A consistent rainfall cycle provides favorable conditions for coffee tree fruiting. High-intensity sunlight and low rainfall during the flowering season, combined with being outside the equatorial calm zone, create ideal flowering conditions for coffee trees. The lower average nighttime temperatures caused by high altitude slow coffee bean maturation, enhancing acidity and imparting distinctive sweetness. The coffee flavor features sweet, juicy black plum and dark berry aromatics in the front, mid-palate notes reminiscent of purple grape juice and mulberry juice with a sweet-tart sensation dancing on the tongue, and a finish with candied fruit sweetness. The flavor is delicate and worthy of slow savoring.
