Nicaragua Coffee Growing Regions
Nicaragua coffee is primarily divided into four major growing regions: Segovias, Matagalpa/Jinotega, Boaco, and the Pacific Coast region. The Segovias region has the highest cultivation altitude, ranging from approximately 1,500-2,000 meters, producing the highest grade SHG (Strictly High Grown) coffee.
Nicaragua Coffee Bean Cultivation
Widespread volcanic ash and shade-grown cultivation methods produce high-quality Nicaraguan coffee with mild, gentle flavors and subtle acidity. Nicaraguan coffee beans are among the largest of all coffee varieties. The MADRIZ region, located in the mountainous northern part of Nicaragua, borders Nueva Segovia, Jinotega, and Esteli. This region is tranquil and elegant, featuring the famous Somoto Canyon. The local population consists mainly of various indigenous tribal groups and people of mixed Spanish and indigenous heritage from the colonial period (predominantly Chorotegas).
The region produces coffee, develops artistic and handicraft processing trades, and offers traditional delicious cuisine. Madriz is characterized by a cool climate, with seemingly simple small towns featuring beautiful houses with tiled roofs and distinctive white buildings with special tiles. The area also has numerous coffee plantations, with mountainous regions covered in lush pine and oak forests.
In a completely natural growing environment, more complex cultivation methods are employed to maintain the delicate aroma and flavor of the coffee. This results in high-quality mountain-grown beans from northern Nicaragua, where the annual rainfall averages between 1500-1700mm and temperatures range from 20-29 degrees Celsius.
The Maracaturra variety originates from a cross between Maragogype and Caturra, combining the full body of the former with the sweet flavor profile of the latter. It is commonly found in Nicaragua.
Maracaturra is a hybrid variety, a crossbreed of Maragogype and Caturra, which is very common in Nicaragua.
This variety is also cultivated at Finca Himalaya, a coffee estate in Apaneca, El Salvador, which has twice won the Cup of Excellence award.
Breaking Tradition: Why Maracaturra?
Mauricio currently grows Maragogype, Orange Bourbon, and Pacamara. Although his current coffees all have excellent flavor profiles, he continues to actively seek ways to improve.
Mauricio spoke with Manuel Meza, then Research Director of The Salvadoran Foundation for Coffee Research (Procafé), who told him about seeing Maracaturra in Matagalpa, Nicaragua, which had repeatedly placed in the top 5 positions of the Cup of Excellence.
Manuel Meza was happy to help Mauricio, so he brought Maracaturra seeds for Mauricio to cultivate.
What Makes Maracaturra Special?
Like Maragogype, Maracaturra coffee beans have a large size. Mauricio explained to me that it inherits the excellent flavor and high yield of Caturra. Its compact stature features abundant leaves that provide protection against strong winds—particularly useful at Mauricio's estate, which often experiences high winds.
Unfortunately, this variety is susceptible to leaf rust disease and therefore requires high levels of care. Its flavor profile features tropical fruits and bright acidity. It placed 5th in the 2015 Cup of Excellence, and Mauricio believes its future harvests will surpass those of Pacamara.
In the future, Mauricio plans to process Maracaturra coffee cherries using semi-washed, honey, and natural processing methods. By doing so, he can determine the best processing approach. He uses African drying beds, which ensure stable air circulation and promote more even drying.
