Rwanda Red Bourbon Coffee Variety - Flavor Characteristics Introduction
You may have heard of or tried the elegant ancient coffee variety: Typica and its derived varieties.
For example, Mandheling, Blue Mountain, Elephant Bean, Kona, Geisha. Many coffee lovers have also heard of and tried varieties such as Brazil Chacal Estate - Yellow Bourbon, which offers strong lemon aroma, full and refreshing fruit acidity, sweet chocolate aroma, and nutty fragrance.
To briefly describe the origin of the Bourbon variety: it was first discovered on Bourbon Island (now known as Réunion Island), located east of Madagascar on the eastern coast of East Africa, hence named after Bourbon Island.
Bourbon varieties yield less than other Arabica varieties and are considered medium-to-low yield trees. Additionally, their wind and rain resistance are inferior to some newer hybrid varieties. However, when Bourbon is grown at high altitudes, it can produce fuller and more uplifting flavors. Therefore, in recent years, some specialty estates in Central and South American countries have been enthusiastic about promoting this low-yield but high-quality variety, such as those in El Salvador, Brazil, and Rwanda in East Africa.
After flowering and fruiting, Red Bourbon coffee cherries typically change color from: green → light yellow → light orange → mature red → darker red when fully ripe. Therefore, it's also called "Red Bourbon variety." In fact, Red Bourbon is what we generally refer to as the Bourbon variety. Bourbon variety coffee beans grown at high altitudes in Rwanda usually have better aroma, brighter acidity, and may even have wine-like flavors when tasted.
Yellow Bourbon variety follows the same color changes as described above, but finally transforms into a bright yellow color, hence distinguished as "Yellow Bourbon variety."
