Coffee Flavor

Coffee flavor comes from various nutrients in green coffee beans that thermally degrade into different aromatic molecular structures during roasting, creating flavors similar to various aromas. Quality coffee beans naturally have rich aromas and exhibit different natural aroma changes at high, medium, and low temperatures, which is very pleasant and worth savoring slowly.

Ninety Plus (90+) is an internationally renowned green coffee production company, known worldwide for providing rare and unique green coffee beans. In addition to direct cooperation with coffee farmers, they own a 134-hectare coffee estate in Panama.

Founded in 2007, Ninety Plus began operations the following year, and since then, we can see traces of Ninety Plus award-winning coffees in various coffee competitions worldwide. For example, in the 2017 World Brewers Cup, Taiwanese competitor Wang Ce used 90+ Geisha as his selected bean, ultimately winning the annual championship.

The Ninety Plus Panama estate is located near Barú Volcano, in a unique area between the Caribbean Sea and the Pacific Ocean. The unique microclimate produces high-quality, captivating specialty coffee.

Geisha/Gesha Variety

Forbes once rated Geisha as "one of the world's ten most expensive coffees," but now it's not just one of them—it's the most expensive coffee! In July 2017, Geisha green beans from Panama's Hacienda La Esmeralda set a sky-high price of $601 per pound. However, on September 13th, Ninety Plus (90+) Geisha coffee auctioned for $50,001.5 per kilogram—that's 150,000 New Taiwan Dollars per kilogram of green beans!

Whether called Geisha, Gesha, or "艺妓" (in Chinese), its name comes from Ethiopia's Geisha Mountain. Its pronunciation is the same as the Japanese Geisha, so Chinese people refer to it as "艺妓."

Geisha has excellent aroma, with characteristic Geisha floral notes and jasmine fragrance. It has bright fruit acidity, such as tamarind, lychee, apple, and orange, with a sweet and clean aftertaste and a very smooth mouthfeel.

Coffee Processing Methods

This refers to the process of turning mature red coffee fruits into dried green beans. Each processing method has its pros and cons, influenced by different natural environments and needs of the producing regions, so each region has its suitable processing methods. The processing methods for this batch of coffee beans are briefly described below:

Natural / Sundried / Dry Process

Also known as natural drying or non-washed processing, this method involves drying harvested coffee fruits in the sun before removing the husk. During the prolonged sun exposure, the beans absorb flavors from the fruit skin and pulp, making the coffee's sweetness and body fuller, easily creating unique aromas.

Honey / Pulped Natural / Semi-dry Process

Between natural and washed processing, this method removes the skin and pulp while retaining the mucilage for sun drying. The "honey" term comes from the very sticky mucilage layer, which feels as sticky as honey. The mucilage layer retains high proportions of sugar and acidity, which is key to honey processing, producing flavors between natural and washed methods.

Washed / Wet Process

After removing the skin and pulp, the beans are soaked and fermented in fermentation tanks to clear the remaining mucilage on the parchment, then washed with water. This process yields the rich acidity that is one of the characteristics of specialty coffee.

Ninety Plus pioneered the exclusive Solkiln™ special processing method, using wood drying chambers to dry coffee beans. After wood is harvested, it is typically placed in wood drying chambers where temperature, humidity, and air circulation are controlled and adjusted to reduce the moisture content of green beans to 10-12%.
