Salvadoran coffee bean varieties include Bourbon, Pacas, Pacamara, and Catuai, with Bourbon and Pacas accounting for approximately 83% of the cultivated area.

El Salvador is the smallest and most densely populated country in Central America. Most regions primarily grow coffee beans as their main crop. However, don't overlook this nation due to its small size. In El Salvador, 60% of coffee is Bourbon varietal, including orange, pink, and red Bourbon. The Bourbon variety is known to the world for its excellent clarity, bright and sweet taste, and strong citrus acidity. Notably, El Salvador is the homeland of Pacas and Pacamara coffee tree varieties. A typical Pacamara offers excellent body with tropical fruit fragrance and honey-like sweetness, along with bright citrus acidity and a sweet aftertaste reminiscent of golden grapefruit. It has become one of Central America's finest varieties in recent years, and many countries now cultivate excellent Pacamara coffee beans.

Salvadoran coffee beans are harvested only once a year, between November and February of the following year. Therefore, newly harvested coffee typically reaches overseas buyers between June and August. Compared to coffee farms in other Central and South American countries, most Salvadoran farms are medium-sized. Farmers cultivate with immense passion and professional expertise to produce high-quality coffee cherries, enabling the coffee export market to flourish and consequently maintaining and improving coffee bean quality. As Salvadorans say, "Just one sip of coffee will make you smile."

The honey processing method, known as Honey Process or Miel Process, often leads people to believe that it involves processing with honey or results in coffee with honey flavoring. In reality, this is not the case. Honey processing involves removing the pulp and then drying the beans with the mucilage still attached. During the drying process, the moisture in the gelatinous substance on the bean surface evaporates, making it as sticky as honey, hence the name.
