Today, I'd like to share two daily brewing methods for Bird of Paradise coffee beans.
Signi/Plantation Estate
Signi/Plantation Estate is located in the Waghi Valley of the Western Highlands Province, situated in high-altitude mountainous areas at approximately 1,500 meters above sea level, featuring well-draining volcanic soil. The estate was established in 1950 and has been in operation for over 60 years, making it a pioneering coffee plantation in the region.
Due to its location in the Southern Hemisphere, the local coffee harvesting season runs from May to August, which differs from the typical October to February cross-year harvest in Central and South America. The farm and surrounding farmers collectively manage nearly 413 hectares of land, harvesting only fully ripe red coffee cherries and processing them at the estate's own processing facility. However, the wet processing method in Papua New Guinea differs from that used in Central and South America, employing a triple-wash fermentation process with each soaking lasting approximately 24 hours, replacing the water with fresh water to control coffee flavor. After washing, the green beans have their outer layers removed and undergo various grading processes, such as AA grade, AB grade, PB round beans, etc. This meticulous post-processing method brings bright and delicate fruity acidity to the coffee, with a clean and long-lasting sweet flavor profile.
Signi/Plantation Estate also places great importance on ecological and environmental issues within the plantation. They plant two different types of shade trees to provide an excellent growing environment for coffee and good habitats for birds. Currently, the plantation hosts 90 different bird species and various wild animals, making it an excellent example of sustainable coffee plantation management.

Recommended brewing method: Pour-over
Grind size: 4 (Japanese Fuji R440)
Water temperature: 89°C
Other Drip Extraction Recommendations:
French Press: Recommended grind size 3.5-4 / Water temperature 90°C
AeroPress: Recommended grind size 3, water temperature 85°C
Siphon: Grind size 4.5, water temperature 91°C
Cold Drip Papua New Guinea Bird of Paradise
Ingredients:
Papua New Guinea Bird of Paradise Grade PB Washed Coffee Beans 30g
Ice water (4°C) 685.5 cc
Equipment:
Manual coffee grinder
Cold drip brewer
Cold drip专用 filter paper
Brewing Method:
Grind the coffee beans into fine powder, pour into the filter cup, place the filter paper, and set up with ice water. Extraction time is approximately 4 hours. After extraction, the cold drip coffee should be refrigerated for 1-2 days for integration, fermentation, and maturation to achieve better flavor.
Taste Test:
Slightly fruity, sweet, and nutty flavor profile, with no bitterness and smooth texture.
