The Story of the "Hybrid Prince"
Like other hybrid varieties created for special purposes, Pacamara was born from coffee producers' pursuit of a "dream variety" that combines high yield and beautiful bean size. Compared to other hybrid varieties containing Robusta genes (*Note: Robusta is one of the main coffee varieties suitable for human consumption alongside Arabica, but is not as delicious as Arabica), Pacamara, with both parents being native Arabica variants, offers extraordinary flavor due to its distinguished lineage.
Champion of Cupping Competitions
In recent years, among the most prestigious CoE (Cup of Excellence) cupping competitions in Central and South America, the most prominent champions have been Pacamara and Geisha. The emergence of these two varieties has truly surprised many experts and expanded the world's perspective on Central American specialty beans. While Geisha is astonishing with its rich, African bean-like aroma, Pacamara can be considered the true champion among American beans. In addition to aroma, its rich mouthfeel is exceptional. It outperforms other varieties in all aspects. No wonder it has achieved consecutive victories, winning championships and top honors in its native El Salvador as well as Honduras and Guatemala since 2003.
Pacamara, inheriting the bloodline of the giant Maragogype bean, shares its impressive bean size and tree height, far surpassing other Arabica varieties. Its enormous, beautiful beans contain surprising special flavors, making it worthy of being called the prince among hybrid varieties. However, its outstanding characteristics also negatively affect yield. Calculated by the same planting unit, Pacamara's harvest is far lower than regular Arabica, especially high-yield varieties like Caturra. Its "high" and "expensive" status also stems from this.
Cupping Report
This bean's richness is best expressed through medium roast, which best presents aroma and partial caramel flavors. The dry aroma completely presents honey peach, pepper, and spice notes. Several minutes after breaking the grounds, the spicy aroma becomes more obvious, with slight woody and honey fragrances. When at the right temperature, take a spoonful and sip - the coffee liquid with slight fruit acidity and nutty flavors fills the mouth; because of this bean's rich sweetness, the entry is thick and will coat your tongue~ If you can't bear to wash away this charming aftertaste, don't rush to drink water; let the honey-like sweet fragrance and chocolate flavor continue to linger in your throat.
