A delicious cup of Sidamo coffee is characterized by balanced acidity, bitterness, and sweetness, along with a smooth mouthfeel. The design of pour-over filters aims to highlight these coffee characteristics. However, different pour-over filters produce distinct brewing styles.

This time, we're using Sidamo coffee beans - the "Hua Kui" from the Guji region.
In 2017, Ethiopia's DW green coffee company submitted their coffee beans to a competition hosted by the African Fine Coffee Association. The natural-processed batch won the TOH Ethiopia championship, earning it the name "Hua Kui" (Flower Champion). Only natural-processed Sidamo coffee beans from the Buku Abel estate and processing station can be called "Hua Kui."
Roast level: Light roast
Temperature: 193℃, with beans dropped at 1 minute 30 seconds
Flavor-focused Brewing
Filter: Hario V60 transparent resin
Grind: Fuji Royal R-220 #3.5
Water temperature: 90℃
Pour 25g of water for 30-second bloom, segment pours at 120g water, finish brewing at 226g.
Total brewing time: 2 minutes 5 seconds
The aroma has prominent cantaloupe notes. The entry brings jackfruit-like gentle acidity, with strawberry and berry flavors emerging in the middle, along with sugarcane sweetness in the aftertaste, creating rich layers.
The V60 conical filter has a wide opening and unique spiral ribs, allowing air to escape more easily and improving extraction quality. The mouthfeel may not be as thick, but its high concentration brings out pronounced acidity and distinct aromatics, making it a standout feature. Additionally, different pouring techniques can yield various mouthfeel and flavor profiles from Sidamo coffee beans, offering great versatility.
Mouthfeel-focused Brewing
Filter: Kalita three-hole flat-bottom filter
Grind: Fuji Royal R-220 #3.5
Water temperature: 89℃
Pour 26g of water for 30-second bloom, segment pours at 124g water, finish brewing at 225g.
Total brewing time: 2 minutes 10 seconds
The entry presents passion fruit and strawberry acidity, with peach-like sweetness in the finish. The body is rounded and full, with high醇厚度.
The Kalita filter features many straight-line distributed ribs with consistent spacing, designed to increase degassing and water flow speed. Its flow rate is relatively slow, primarily using immersion for extraction. The brewed coffee has higher醇厚度 and is less likely to be over-extracted.
Balanced Brewing
Filter: WAVE cake filter
Grind: Fuji Royal R-220 #3.5
Water temperature: 90℃
Pour 26g of water for 30-second bloom, segment pours at 124g water, finish brewing at 225g.
Total brewing time: 2 minutes 7 seconds
The entry is smooth with prominent fermented berry aroma. Passion fruit flavors are distinct, and as the temperature drops, strawberry-like berry acidity and sweetness emerge, creating overall balanced flavors.
The cake filter has a flat bottom with three drip holes. The flat-bottom design makes extraction more complete. The filter body and wave-shaped paper don't fit too tightly, allowing for more consistent temperature and more dispersed water flow. Coffee brewed with the cake filter has both rich mouthfeel and certain complexity, positioned between V60 and flat-bottom filters.
Choosing Your Filter
These are the three most common filters: Kalita three-hole, WAVE cake filter, and Hario V60. If you prefer prominent flavors with rich layers and distinct aromatics, choose the Hario V60. If you enjoy rich mouthfeel, select the Kalita three-hole filter. For a balance between aroma and mouthfeel, the WAVE cake filter is ideal. Each filter has its unique characteristics, allowing you to choose based on your preferences, as pour-over brewing offers great versatility.
