Ethiopia: The Birthplace of Coffee
Ethiopia is the birthplace of coffee. Ethiopian coffee has as deep a cultural heritage as Chinese tea.
Ethiopian coffee is known as "wild coffee," and a cup of Ethiopian coffee can bring you an unprecedented primitive experience. Ethiopia possesses unique natural conditions suitable for growing all imaginable coffee varieties.
Based on these four different production methods, Ethiopia can be divided into nine major coffee-producing regions, including five specialty coffee areas: Sidamo, Yirgacheffe, Harar, Limu, and Lekempti, as well as four general commercial bean regions: Djimah, Illubabor, Tepi, and Bebeka. Each region uses either sun-dried or washed processing methods, and different processing methods affect the flavor. Currently, sun-drying accounts for about 80%, while washing accounts for about 20%. Sidamo and Yirgacheffe coffee beans are primarily washed with some sun-dried, while Limu and Tepi regions are mainly washed. Sun-dried beans are mainly from Harar, Djimah, Lekempti, and Illubabor.
Sidamo Coffee Region
Sidamo coffee beans are grown at altitudes of 1400-2200 meters and is a renowned specialty coffee region in southern Ethiopia, bordering Kenya. Washed Sidamo coffee beans appear light green, with small, oval-shaped beans that are full and well-formed, with average good quality. They have aromatic and mellow aromas, and the raw coffee beans are slightly grayish. Some areas have larger beans while others have smaller ones. The acidity is both gentle and intense, the body is moderate, and it has sweet, spicy aromas. It is one of the garden coffees of the southern Ethiopian highlands.
Unlike typical African coffees, Sidamo coffee beans have clear fruit acidity, a smooth mouthfeel, and delicate floral and herbal aromas. The unique and rich taste leaves a distinctive and pleasant aftertaste, with a slowly rising finish that contains unique sweetness. One drop leaves an endless aftertaste, possessing a wild beauty, and is considered the thorny rose among coffees.

Ninety Plus coffees are classified according to "fruit flavor intensity," which differs from traditional processing method classifications of Washed, Honey, and Natural. Similarly divided into three categories - W2, H2, N2 - but different processing methods create different levels of fruit flavor, so you might find washed or natural processed coffee beans in the Honey flavor "H2" classification.
With regular beans, we can easily find the letters N, H, or W, such as Ethiopian Yirgacheffe G3 N, which is the more commonly seen "Natural Yirgacheffe G3" on the market. Here, N represents Natural (sun-dried). H = Honey (honey processed) and W = Washed. However, 90+ has a different perspective - they believe beans should be classified by flavor profile rather than processing method. Typically, each processing method has representative flavor characteristics.
90+ believes that sometimes different processing methods can still result in similar flavor profiles. For example, a honey-processed bean might actually display flavor characteristics similar to what is typically expected from washed beans. Therefore, they introduced three basic flavor indicators: N2, H2, and W2, where flavor is distinguished by the intensity of fruit aroma and mouthfeel:
W2: (Low) Lower fruit tones, emphasizing brightness, acidity, and floral aromas.
H2: (Moderate) Moderate fruit tones, emphasizing sweetness, fruit mouthfeel (not aroma), and tea-like notes.
N2: (High) Stronger fruit tones, emphasizing bold flavor expression, sweet-sour balance, jam-like flavors, and dried fruits.

Level Up is a sub-brand of 90+ Ninety Plus, maintaining the amazing flavors of 90+ but at a more accessible price point. Derar Ela means "Highly Floral" in the Sidamo language, referring to "rich floral aromas."
