The Cauca Best Cup competition began in 2014 as a competitive bidding event for coffee bean batches. In addition to the national-level competitions we commonly see, such as Panama's Best of Panama or the Cup of Excellence (COE) held in Central and South America, Cauca Province also holds its own regional competitions.

So what is COE (Cup of Excellence)? It is the world's most important specialty coffee bean competition. First held in Brazil in 1999 by the Alliance for Coffee Excellence (ACE), it is currently the most well-known and authoritative specialty coffee competition worldwide, and also the most credible in judging top-tier coffee.

The competition is generally held once a year, where specialty coffee growers submit their best coffee beans to domestic or international judges from the association. Participating coffees must undergo strict competition rules, and ultimately winning estates must pass through six stages. Typically, from 500 estates, fewer than 30 remain after screening. Therefore, Cauca Best Cup and COE are two different concepts of competition.

It is jointly organized by renowned American traders, local exporters, and the Colombian Coffee Association. The first Cauca Cup in 2014 received about 200 competing samples, while 2015 saw more than double that number, with about 500 small farmers competing in this competition. The organizers select the top 30 from over 500 samples, then an international judging panel conducts cupping to select the final top 12. On the last day of the event, green bean merchants and roasters from around the world who came to participate in the Cauca Cup place their bids.

This not only increases the income of small farmers and improves their living conditions, but also makes them more willing to invest and improve in coffee cultivation and production, producing higher-quality coffee.

Cauca Province is a coffee bean origin-certified producing region in Colombia, with an average altitude of 1758m and the highest altitude reaching up to 2100m. The region's topography, precipitation, temperature, and volcanic soil provide suitable conditions for coffee growth. 80% of the area is mountainous, with parallel mountain ranges in the eastern and central parts, which are part of the Andes Mountains. The central mountain range includes two main volcanoes, Sotara and Petacas. The volcanic ash is rich in nutrients, and the average daily temperature is 11°C while daytime average temperature is 18°C. The large temperature difference between day and night allows coffee cherries to more fully absorb nutrients from the coffee fruit. The dry season mainly occurs from August to September each year, followed by the rainy season which brings a concentrated coffee flowering season, leading to a concentrated coffee harvest season the following year.

The cultivated variety is Caturra, a Bourbon variety with better yield and disease resistance than Bourbon, and the trees are shorter, making harvesting convenient. The flavor is comparable to or slightly inferior to Bourbon beans, but more importantly, it has extremely strong adaptability and can thrive without shade trees, even in direct exposure to strong sunlight, and can adapt to high-density planting.

It uses full washed processing. After removing the skin and pulp, it's placed in fermentation tanks for 16-36 hours. Fermentation bacteria dissolve the mucilage, and finally it's dried on raised beds in the sun. This makes its lime acidity more prominent, with grape juice-like acidity, rich floral aromas, high acidity, pleasant sweetness, medium body, and nutty aftertaste in the finish. Overall, it's pure, mild, with a smooth texture and a balanced, lively, and multi-layered flavor profile.
