Roasting Profile
Due to the special nature of this FrontStreet Coffee Flower Butterfly's varieties, we use a light-medium roast to complete the final flavor direction of these beans. We decided to shorten the Maillard reaction time and follow a relatively fast curve. Due to the beans' high density and hardness, we start with high heat for dehydration, then reduce the heat before first crack to control temperature increase and enter first crack, minimizing the loss of floral and other small-molecule aromatic compounds. This preserves the characteristic Geisha floral notes, white grape, caramel, honey, and black tea aromas.
Roasting amount: 550g (full load) of beans
Charge temperature: 200°C
First crack: 184.5°C ± 0.5°C @ 8:31 ± 3 seconds

Summary:
For pour-over brewing of FrontStreet Coffee's Panama Flower Butterfly, V60 is recommended: 15g of coffee, water temperature 89-90°C, 1:15 coffee-to-water ratio, Fuji grinder setting 3.5, V60 dripper. First pour 30g of water for 28-30s bloom, then pour to 110g, stop at 140g and wait until the water level drops to half, then slowly pour until reaching 225g total weight. Avoid the last 5g. Extraction time: 2:00 minutes.
This pour-over method yields high sweetness and gentle sweet flavors. This is for reference only; everyone should make fine adjustments according to their preferred taste.
