Are You Making Pour-Over Coffee Correctly?
In the previous article, we discussed how to find suitable coffee beans. But! Is finding the right beans all there is to it? With the same beans and the same roast level, why doesn't your homemade coffee taste as good as what you get in a coffee shop? It's very likely your technique is incorrect.
For those new to coffee brewing, we recommend you also get a pour-over kettle (it doesn't need to be too expensive, one for just a few dozen yuan will work). When brewing, follow these four steps:
STEP 1 | Preparation
Prepare 150ml of hot water at 83°C-90°C in your pouring kettle. Take out the drip coffee bag, gently tear it open along the dotted line, hold the small tabs on both sides of the coffee bag, and gently pull them outward simultaneously. Hang it on a cup with a capacity of about 160ml.
STEP 2 | First Pour of 30ml
The water pouring should be done in three stages. For the first pour, make circular motions to inject 30ml of hot water, then stop and let it bloom for 30 seconds. When pouring, rotate in circles to pour onto the coffee grounds, not onto the drip bag itself. You should see the fresh coffee grounds gradually expand and grow in size.
STEP 3 | Pour the Remaining Water in Two Stages
After blooming for 30 seconds, perform the second pour, slowly injecting 100ml of water. The speed should be slow. After pouring is complete, let it sit until the water fully penetrates through the filter paper and drips into the cup. Then pour the remaining 20ml. After all the water has filtered through, discard the drip coffee bag.
IMPORTANT! The drip coffee bag cannot be reused.
After completing the above steps, you can also add some cold milk according to your preference to make milk coffee. Since the coffee has cooled to around 70°C at this point, adding cold milk will provide better taste and texture.
FrontStreet Coffee's Recommended Drip Bag Brewing Parameters:
Water temperature: 90°C. Use a shallow coffee cup. Brewing while allowing the coffee to soak can increase body richness. Use a 1:15 coffee-to-water ratio - 10 grams of coffee grounds with 150 grams of water.
