Finding Your Perfect Coffee Moment

Step 1: Choose Your Coffee Beans
Coffee beans are simply divided into light roast, medium roast, and dark roast. Coffee cherries are actually like fruits - good coffee beans will have fruity aromas, floral notes, cocoa flavors, nutty flavors, etc. Generally, the lighter the roast, the more pronounced the acidity, and the better you can taste the essence of the coffee bean. Conversely, the darker the roast, the more obvious the bitterness, but some people love the rich coffee aroma of dark roasts, especially coffee enthusiasts who have been drinking coffee for decades.
Step 2: Grinding
A - Extra Fine Grind: Particles the size of granulated sugar. Suitable for: Espresso machines, moka pots.
B - Fine Grind: Particles between granulated sugar and fine sugar. Suitable for: Cold drip coffee.
C - Medium Grind: Particles between fine sugar and coarse sugar. Suitable for: Siphon (syphon), AeroPress, paper filter cones, drip coffee makers.
D - Coarse Grind: Particles similar to coarse sugar. Suitable for: French press, flannel filters.
CAFÉ Note
1. After coffee is ground, its surface area exposed to air increases, making it easy to oxidize and affect flavor. Grinding before brewing is absolutely crucial for making good coffee! Even using an inexpensive manual grinder will be better than buying pre-ground coffee directly from shops.
2. To avoid absorbing odors, wipe the grinder blades and machine platform with a damp cloth after each use. When choosing a grinder, select one that grinds evenly in particle size. If the grind is uneven, you can solve this problem by sifting to improve the coffee's purity.
Step 3: Control Water Temperature
When asking coffee professionals about water temperature, you often get strange numbers like 92°C, 87°C, etc. Every coffee professional has their preferred water temperature, which is usually adjusted based on desired taste. Generally speaking, high water temperature can bring out the bean's character - both bitterness and acidity can be expressed. Coffee brewed with low water temperature has a smooth, mellow taste and can extract more acidity.
Step 4: Brewing
Many coffee shops abroad don't have a single espresso machine in their establishment - all coffee is brewed by hand! Pour-over is the best way to express a brewer's personality and skill, and sometimes you can even taste when they're in a bad mood!

Suitable beans: Light, medium, or medium-dark roast; coarse to medium grind size.
Coffee Brewing Tips
Super Simple Foolproof Hand Brew with Mr. Clever Smart Dripper!
Step 1: Fold the filter paper and place it in the smart dripper, rinse with hot water, then add 12-15 grams of coffee grounds.
Step 2: Pour hot water at 85-94°C in a circular motion until the filter is about 80% full.
Step 3: Stir with a spoon and let steep for about 40 seconds.

How to Choose Filter Paper and Drippers?
1. Many places sell coffee filter paper. It's recommended to choose unbleached brown filter paper, and rinse it with hot water before brewing to clean it slightly. Brands like UCC, Tiamo, Kalita, Hario, and pearl horse are favorites among many coffee enthusiasts.
2. Generally, drippers are divided into conical and trapezoidal types. Conical drippers have faster flow rates and shorter extraction times, requiring better technique to control. For beginners, it's recommended to start with trapezoidal drippers. Hario, Kalita, and Tiamo are all excellent brand choices.
3. Besides filter paper for pour-over, there are also metal filters and flannel cloths to choose from. Metal filters can extract coffee oils, while flannel filters, due to longer filtration time, can extract more aromatic substances, resulting in a richer flavor.
