Processing Methods and Flavor Profiles:

1. Natural: Fermented rice wine aroma, peach, blueberry, floral notes, honey, strawberry, grape juice, rose essence, sweet honeydew melon, overall robust, intense flavor.

2. Honey: Fruit wine aroma, peach, cherry, floral notes, frangipani fragrance, mango jam, passion fruit jam, strawberry, rounded mouthfeel, excellent sweetness.

Ninety Plus (90+) is an internationally renowned green coffee bean production company, famous worldwide for providing rare and unique green coffee beans. Besides direct cooperation with coffee farmers, they own a 134-hectare coffee estate in Panama.

Founded in 2007, Ninety Plus began its operations the following year. Since then, we can see traces of Ninety Plus winners in coffee competitions of all sizes worldwide. For example, in last year's 2017 World Brewers Cup, Taiwanese contestant Wang Ce used 90+ Geisha coffee as his chosen bean and ultimately won the annual championship.

The Ninety Plus Panama estate is located near Barú Volcano (Volcán Barú), in a unique zone between the Caribbean Sea and the Pacific Ocean. The unique microclimate produces excellent and captivating specialty coffee.

Geisha Coffee/Gesha Variety

Forbes once rated it as "one of the world's ten most expensive coffees," but today it's no longer just one of them—it's the most expensive coffee! In July 2017, green Geisha coffee beans from Panama's Hacienda La Esmeralda set a sky-high price of $601 per pound. However, on September 13th, Ninety Plus (90+) Geisha coffee was auctioned at $50,001.5 per kilogram—that's 50,000 RMB per kilogram of green beans!

Geisha or Gesha, its name comes from Geisha Mountain in Ethiopia. Its pronunciation is the same as the Japanese Geisha, therefore Chinese people call it Geisha.

Geisha has excellent aroma, with distinctive Geisha floral notes, jasmine fragrance, bright fruit acidity such as tamarind, lychee, apple, and orange. The aftertaste is sweet and clean, with a very smooth mouthfeel.

Coffee Processing Methods

This refers to the process of transforming mature red fruits into dried green beans. Each processing method has its pros and cons, influenced by the natural environment of the origin and different needs. Therefore, each origin has its suitable processing methods. A brief introduction to the processing methods of this batch of coffee beans is as follows:

Natural Process

Also known as natural drying method or non-washed processing, this method involves placing harvested coffee fruits in the sun to dry before hulling. During the prolonged sun exposure process, the coffee absorbs flavors from the fruit skin and pulp, making the coffee's sweetness and body fuller, easily creating unique aromas.

Honey Process

Situated between natural and washed processes, this method removes the skin and pulp while retaining the mucilage to dry in the sun. The "honey" name comes from the very sticky mucilage layer, which feels as sticky as honey. The mucilage layer retains a high proportion of sugar and acidity, which is key to the honey process, producing flavors between natural and washed processes.

Washed Process

After removing the skin and pulp, the beans are soaked and fermented in fermentation tanks to clear the mucilage remaining on the parchment, then washed with water. This process produces the rich acidity that is one of the conditions for specialty coffee.

Ninety Plus' original Solkiln™ special processing method uses wood drying rooms to dry coffee beans. After wood cutting, it is usually placed in wood drying rooms where temperature, humidity, and air circulation are controlled and adjusted to reduce the moisture content of the green beans to 10-12%.
