Costa Rica's coffee beans are one of the familiar coffee growing regions for coffee lovers. Geographically situated in the Central American isthmus, it benefits from the climate regulation provided by Pacific and Atlantic ocean currents and sea breezes. With towering volcanic peaks reaching altitudes as high as 2,000 meters, coffee cherries slowly mature and develop in the fertile volcanic ash soil and high-altitude cool environment, nurturing coffee beans with complete and rich flavors.

Evolution of Coffee Processing Methods

Costa Rica has a long history of coffee cultivation. In earlier periods, Costa Rican coffee beans were mostly famous for being processed using the washed method. However, this method required large amounts of water resources, making it not only costly but also having significant environmental impact.

The Rise of Honey Processing

However, in the past decade or so, the more innovative "dry" processing method has become popular. This new method, collectively known as "honey processing," involves estates harvesting fully mature and high-quality coffee beans. To conserve water resources, they use depulpers to remove the outer fruit skin and utilize the function of scrapers to adjust the degree of pulp removal. The parchment beans with mucilage are then placed on so-called African-style drying beds for sun-drying. During the drying process, adequate air circulation is maintained to produce sweeter and cleaner coffee.

This processing method can reduce 90% of water resource pollution and decrease water usage by 95%. This technique not only effectively protects the ecosystem but also improves coffee quality, making it a win-win-win solution for farmers, the environment, and consumers.

The success of this technique depends on controlling the degree of fermentation and the amount of residual pulp. The more residual pulp, the higher the sweetness of the processed coffee beans.

Advanced Honey Processing Variations

In recent years, Costa Rica has developed many more refined honey processing methods. Unlike traditional washed methods that remove all pulp first, honey processing retains appropriate amounts of pulp for fermentation. This not only effectively reduces the acidity in the coffee but also adds a mature fruity sweetness to the coffee's flavor profile, providing richer sweetness in the mouthfeel.

The resulting coffee beans are categorized by color from light to dark—white honey, yellow honey, red honey to black honey—showcasing different levels of "honey character." The difference between them lies in the amount of pulp retained. From light to intense, they offer varying degrees of acidity, complex aromas, and body thickness—each with its own depth and merits. During the processing, unwanted waste residues are recycled as pulp and fertilizer to maintain the natural balance of the ecosystem.
