The washed processing method involves taking harvested coffee cherries and putting them through a pulp separator to separate the beans from the pulp. The beans are then placed in clean water tanks for fermentation (this step is skipped in honey processing) to remove the mucilage layer, followed by sun-drying. This processing method results in coffee with cleaner, brighter flavors and higher acidity compared to natural processing (because the beans aren't dried with the fruit pulp attached!).
"Is washed coffee cleaner?"
This coffee refining method was invented by the Dutch. The brewed coffee features bright acidity and clean layers, which is why it has become so popular!
But how exactly is washed coffee processed? And why is it called "washed"?
After harvesting the coffee fruits, washed coffee beans are first soaked in water tanks for screening. Unripe beans and foreign objects that float on the water surface are removed before entering the next stage of the refining process.
After screening, a depulper is used to remove the pulp, leaving parchment beans. At this point, the coffee beans still have mucilage remaining.
Unlike other processing methods, washed beans are placed in water tanks for fermentation after removing the pulp, allowing the mucilage to separate from the coffee beans. This is followed by about a week of drying treatment.
This is the complete refining process of the washed method.
