Mexico - Chiapas

Mexico's coffee industry began in the 19th century, introduced from Jamaica (the country that produces Blue Mountain coffee), primarily cultivating Arabica varieties. Over two million people depend on coffee for their livelihood. Chiapas in the south is one of Mexico's most important coffee-producing regions, adjacent to Guatemala's Huehuetenango region. Due to geographical factors, most coffee beans are exported to the United States, with limited domestic consumption.

Due to geographical environment and climate reasons, Mexico's coffee cultivation areas are near Guatemala, with production classification belonging to the Central American type. Main producing regions include: Coatepec, Oaxaca, and Veracruz states. Products are mostly high-altitude produced washed beans, with coffee beans primarily exported to the United States.

Chiapas

Chiapas is located on the plateau at Mexico's southern border, adjacent to Guatemala. In 1991, Mexico's National Institute conducted research on systems for protecting indigenous rights and established regulations through product trade to enhance protection for native populations. Under this mission and conditions, cooperative organizations in various regions emerged like mushrooms after rain. OPCAAC, whose full name is Organización de Productores de Café de Ángel Albino Corzo, is an organic smallholder producer organization in Chiapas state. Founded in 1995, OPCAAC established farm management systems that emphasize open and transparent independent production and marketing information for coffee farmers, while setting standards to avoid excessive land development. The organization provides its members with micro-loans, technical training, social activities, and other assistance, while continuously focusing on the development of organic agriculture and ecological protection. With sustainable operation as its mission, OPCAAC creates value for the local coffee industry, improving the quality of life for local farmers through fair trade and agricultural practices that comply with ecological conservation. OPCAAC members use environmentally friendly farming methods to cultivate land, establishing economic and social sustainable operation through regional organizational development, enhancing product quality.

Most of Mexico's coffee comes from the Chiapas plateau in the south, which is very close to Guatemala. The Chiapas plateau has an altitude of approximately 1250-1550 meters.

This Chiapas producing region borders Guatemala. The Sierra Madre mountain range provides the essential altitude for quality coffee production and beneficial volcanic soil.
