Honduran coffee is divided into six major producing regions, distributed across the western and southern areas: Copan, Opalaca, Montecillos, Comayagua, Agalta Tropical, and El Paraiso. The forging of harsh terrain and climate, combined with fertile soil, gives coffee beans a special rich, bitter-sweet cocoa aroma. Hondurans are optimistic, cheerful, and love life. Honduran coffee has a rich and mellow taste, with no astringency or acidity. Both its body and aroma are quite high, giving it a distinct character. Honduran coffee can reveal multi-layered flavors depending on the degree of roast. Medium roast can bring out the sweetness of the beans to the extreme, while dark roast enhances the bitterness, but the sweetness does not disappear. Generally speaking, medium roast has the best taste, with rich and unique aromas, deeply favored by Honduran coffee enthusiasts.

The Opalaca producing region is located in the southern area of Santa Barbara, as well as in Intibuca and Lempira. It is named after the Opalaca mountain range that stretches through this region.
