Understanding Black Coffee
Black coffee is coffee without any additives, embodying the five flavors of coffee: aroma, sweetness, mellowness, acidity, and bitterness. It is both primitive and bold, profound and intriguing. Black coffee emphasizes the inherent aroma of coffee itself, with bitterness being its fundamental characteristic. This bitterness varies in intensity and texture. Raw coffee beans contain only trace amounts of bitter compounds; the characteristic bitterness of coffee develops through the caramelization and carbonization of sugars, starches, and fibers during roasting.
Black coffee also contains acidity. Appropriate heat processing creates moderate acidity, which enhances the coffee's flavor and adds depth. The sweetness in black coffee is intrinsically linked with its bitterness - therefore, high-quality black coffee with a clean profile must carry a sweet undertone.
Original Flavor Coffee vs. Black Coffee
Regular original flavor coffee, on the other hand, doesn't necessarily follow any specific standards. Generally speaking, "original flavor coffee" is a term created by merchants and doesn't represent any specific type of coffee - it could be black coffee or even 3-in-1 instant coffee mix. For example, Starbucks' original flavor coffee could be an unsweetened, milk-free Americano black coffee, or it could be a simple latte made with just coffee and milk.
Black coffee specifically refers to coffee with nothing added - no milk, no sugar, no creamer, absolutely nothing.
