Preparation

First, prepare 30g of freshly ground single-origin coffee powder and about 350cc of 93°C hot water. The first key point is to accurately measure the weight of single-origin coffee beans. The second key point is to recommend adding water in four separate portions.

Step 1: Place the filter paper in the filter cup

First place the filter paper in the filter cup, then pour in the single-origin coffee powder. Tap it gently on the desktop to create an even surface of coffee powder. Typically, after placing the filter paper in the filter cup, hot water is poured over it first for heat preservation and to remove paper odor. However, because BLUE BOTTLE COFFEE's filter paper is made from bamboo that doesn't have paper odor, this step can be omitted if using BLUE BOTTLE COFFEE filter paper.

Step 2: From center to edges

After blooming the coffee, slowly pour 93°C hot water from the center outward to evenly wet the coffee powder at a speed of about 8-10 seconds, adding approximately 150cc. Then wait for about 10 seconds.

Step 3: Fine, dense bubbles

After the previous two steps, add 100cc for the third and fourth portions respectively. Each water addition should not be too fast. A very important point is to let the coffee powder expand like a cake, creating fine, dense bubbles on the surface. Pay attention to this step - the water pouring speed should be gradual, just slightly higher than the coffee powder level.

Step 4: Waiting time

Pouring a cup of aromatic coffee requires some waiting time. On average, one cup takes about 2.5 to 3 minutes. The pouring speed should not be too fast, adding approximately 100cc each time with intervals between additions. This will create a cup of coffee with your preferred taste.
