Key Factors for Perfect Coffee

※ Choose fresh coffee beans: When buying beans, pay attention to whether the color and particle size are consistent. Good coffee beans should have a fresh, glossy appearance, rich aroma, and no mixed off-flavors.

※ Grind consistency: The grind should be adjusted according to the coffee machine being used. Too fine a grind will make the coffee bitter and easily clog the coffee machine; too coarse a grind will result in coffee with less flavor. Grinding can generally be divided into three stages: coarse grind (Percolator), medium grind (Drip Coffee), and fine grind (Espresso Machine).

※ Fresh, properly temperatured soft water: 98% of coffee is water, so only water with good quality can bring out the original aroma and richness of coffee. It's best to use filtered water to brew coffee, especially avoid using water containing chlorine. Boiling will make coffee bitter, so never boil coffee - the temperature should be slightly below 96°C.

※ Coffee is best not reheated. When brewing, pay attention to making only the amount needed each time, and it's best to drink it immediately after brewing. The optimal drinking temperature for coffee is 85°C.

Coffee Brewing Methods

Coffee grounds brewing methods are generally classified into the following types:

1. Filter Coffee

Place medium-dark roasted, coarsely ground coffee powder in filter paper, slowly pour boiling water into the center and then around it, then back to the center. The boiling water passes through the coffee grounds and drips into the pot. For one serving, use about 8-10 grams of coffee powder and approximately 120cc of boiling water.

2. Napoletana

Place medium-ground coffee powder (5-6 grams per cup) in the filter inside the pot. After covering the filter, place it in the water heater. When the water boils, remove the pot and invert it. The boiling water seeps through the coffee powder in the filter and drips into the cup. Napoletana coffee is not very thick, but has full body and is smooth and rounded.

3. Siphon

First place coffee powder in the upper funnel, then add water to the pot, then tightly fit the funnel mouth into the pot opening and bring the water to a boil. When the boiling water rises into the funnel, stir while brewing for about 40 seconds to 1 minute, then extinguish the alcohol lamp. At this point, wait for the coffee to drop back into the pot, then remove the funnel and pour out to drink.

4. Mocha

This is a type of distillation method. Coffee brewed with a Mocha pot has a rich concentration and aroma. The Mocha pot is divided into upper and lower parts. Water in the lower half of the pot is boiled until it reaches boiling point. When the water boils, steam pressure forces the boiling water to rise through the filter containing coffee powder to the upper part of the pot. When coffee begins to flow into the upper part of the pot, reduce the heat, as too high a temperature will cause the coffee to develop a burnt taste and destroy its original flavor.

5. Espresso

Coffee powder will have different characteristics depending on different brewing methods, which is one of the reasons why espresso machines were invented. Espresso machines can continuously extract several cups of coffee. The essence of the brewing process is completely extracted through pressure, making the brewed coffee more concentrated, with an additional layer of coffee crema, and better taste and aroma.

6. Turkish Ibrik Coffee

This is a concentrated, high-intensity coffee with a bit of aroma. The preparation method involves heating a copper coffee pot, placing appropriately ground very fine coffee powder, sugar, and spices in the pot, boiling it, adding a little water and boiling again, repeating this process three times.
