Step 1: Selecting Coffee Beans

Coffee beans are generally divided into light roast, medium roast, and dark roast. Coffee cherries are actually like fruits - good coffee beans will have fruity aromas, floral notes, cocoa flavors, nutty flavors, etc. Generally, the lighter the roast, the more pronounced the acidity, and the better you can taste the essence of the coffee bean. Conversely, the darker the roast, the more obvious the bitterness, but some people particularly love the rich coffee aroma from dark roasts, especially coffee enthusiasts who have been drinking coffee for decades.

Step 2: Grinding

A - Extra Fine Grind: Particles similar to white sugar size. Suitable for brewing methods: Espresso machine, Moka pot.

B - Fine Grind: Particles between white sugar and fine sugar. Suitable for brewing methods: Cold drip coffee.

C - Medium Grind: Particles between fine sugar and coarse sugar. Suitable for brewing methods: Syphon, AeroPress, paper filter dripper, American coffee maker.

1. After coffee is ground, the contact area with air increases, making it easy to oxidize and affect the flavor. Grinding before brewing is absolutely a crucial key to making good coffee! Even using a cheap manual grinder will be better than buying pre-ground coffee powder directly from the store.

2. To avoid absorbing odors, wipe the grinder blades and machine base with a damp cloth after each use. When choosing a grinder, select one that produces uniform particle sizes. If the grind is uneven, you can solve this problem by sifting to improve the coffee's purity.

Step 3: Controlling Water Temperature

When asking coffee professionals about water temperature, you often get strange numbers like 92°C, 87°C, etc. Each coffee professional has their own preferred water temperature, which is usually adjusted based on their preferred taste profile. Generally speaking, high water temperatures can extract the bean's personality, expressing both bitterness and acidity; low water temperatures produce a smoother, more mellow taste and are better at extracting acidity.

How to Choose Filter Paper and Drippers?

1. Many places sell coffee filter paper. It's recommended to choose unbleached brown filter paper, and rinse it briefly with hot water before brewing. Brands like UCC, Tiamo, Kalita, Hario, and pearl horse are favorites among many coffee enthusiasts.

2. Generally, drippers come in two types: conical and trapezoidal. Conical drippers have faster flow rates and shorter extraction times, requiring better technique to control. For beginners, it's recommended to start with trapezoidal drippers. Hario, Kalita, and Tiamo are all excellent brand choices.

3. Besides filter paper, hand-pouring can also use metal filters and flannel cloths. Metal filters can extract coffee oils, while flannel filter cloths, due to longer filtration times, can extract more aromatic substances, resulting in a richer flavor.
