If you need to keep coffee for a long time, seal it in an airtight container and store it in the freezer.
Coffee is vulnerable to temperature, humidity, light, and oxygen. Once a bag is opened and exposed to air, the beans slowly oxidize and go stale. At room temperature, stored away from light, aim to finish the coffee within two weeks. Ground coffee presents far more surface area to the air and degrades even faster. Whether you buy beans or grounds, it is best to buy only as much as you will actually use.
