The freshness of green coffee beans starts counting from the time they are roasted.
Freshly roasted coffee beans will begin to degas, a process that continues for about 3-5 days. When all the gas has been completely released (about a week), the freshness of the coffee beans will begin to decline over time.

How to Judge Coffee Freshness
1. Oil Surface: For light to medium roasts, no oil is visible; for dark roasts, the darker the roast level, the more oil appears.
2. Aroma: Freshly roasted coffee beans have a rich, intense aroma.
3. Foam: Fresh coffee beans still contain some unreleased gas, so filter bag expansion is not due to added nitrogen, but rather the packaging of fresh beans.
When hot water is poured over ground coffee powder, foam will appear on the surface. The coffee beans seem to be breathing, producing some bubbles and oils.
