Coffee produced in Honduras rarely appears in the coffee market, but factors such as altitude, temperature variations, and fertile soil create ideal natural conditions for producing excellent coffee. However, in the past, due to inadequate processing technology and equipment at Honduran coffee farms or cooperatives, production remained focused on bulk coffee or inexpensive coffee that prioritized quantity over quality. High-quality, high-altitude coffee often suffered damage during mid-stage processing, significantly compromising its mouthfeel and flavor characteristics. In recent years, with Fair Trade funding for processing equipment and enhanced professional knowledge for coffee farmers, Honduran coffee has gradually emerged from its downturn to become a rising Central American coffee variety in the past one to two years.

Located in the southwestern mountain region, Marcala is Honduras's most important coffee production area. The overall coffee quality is superior, far surpassing other coffee-producing regions in Honduras. Coffee farms are guided by the Fair Trade Association (F.T.), with most coffee plantations situated between 1,500-1,800 meters above sea level. Coffee is organically cultivated using natural compost and natural methods for pest and disease control. Furthermore, members and green bean purchasers are required to comply with the Fair Trade Association's founding principles of improving coffee farmers' incomes through fair trade, thereby enhancing family income while simultaneously improving the overall community's educational and living environment.

Marcala coffee is clearly marked as Fair Trade certified on coffee bags

And certified by BIOLATINA (Latin American Organic Agriculture Organization)

S.H.G is the English abbreviation for Strictly High Grown beans
