Yirgacheffe: The Jewel of Ethiopian Coffee

Yirgacheffe is a renowned name in the specialty coffee world. It is a town located in the southern highlands of Ethiopia and serves as a collection center for nearby coffee beans.

Additionally, it has become synonymous with coffee produced in the Yirgacheffe region, characterized by rich citrus, lemon notes, and floral aromas. Currently, under ECX classification, Yirgacheffe can be further divided into four sub-regions: Kochere, Gelana Abaya, Yirgacheffe, and Wenago. However, generally speaking, Yirgacheffe refers to the collective term for coffee produced within the Gedeo administrative region.

Kochere: A Premium Sub-region

Kochere is a small sub-region located in the southwestern part of Yirgacheffe, adjacent to a village called Ch'elelek'tu, situated in the Gedeo Zone. It has 15 washing stations and approximately 25,000 farmers, with an average cultivation area of 5 hectares. The flavor characteristics of the Kochere region are dominated by citrus and stone fruit flavors with tea-like notes. HAMA, located at elevations between 1600-2000 meters, is a small local tribe within the Kochere area.

French Press: Recommended grinder setting 4, water temperature 90°C

Siphon: Recommended grinder setting 4, water temperature 90°C~91°C

AeroPress: Recommended grinder setting 3.5, water temperature 90°C
