Gedeb Coffee Region and Processing
Gedeb is located in the southern part of Yirgacheffe, and Gedeb is also the name of the processing station in this area, responsible for collecting and drying coffee beans on raised beds. The Gedeb processing station has approximately 700 local coffee farmer members who deliver coffee beans to the station for drying and hand-sorting processes. The local coffee farmers' farms are actually just "gardens" adjacent to their homes with slightly larger areas, cultivating local native heirloom varieties. When farmers deliver coffee to the processing station, it's still in the form of complete coffee cherries, which the station grades and places on drying beds for drying.
Grade 1 Processing and Market Dynamics
This coffee is processed as Grade 1, which for natural processed coffee means it undergoes multiple hand-sortings during processing to remove overripe or underripe coffee cherries. After natural processing, the green coffee beans undergo another hand-sorting to prevent any previously undiscovered defective beans from being mixed in. Natural processed coffee is processed at the origin before being sent to the capital Addis Ababa, where it undergoes another hand-sorting upon arrival to enhance the coffee's appearance and flavor quality. This region is highly competitive, so coffee farmers can obtain good prices for selling coffee cherries, especially for selected ripe cherries. For example, farmers received higher prices this year than last year because competition among washing stations became more intense, allowing farmers to benefit from this situation.
Flavor Profile and Brewing Recommendations
The aroma of this coffee is intoxicating, with rich fruity notes similar to intense cherry cola. When roasted to a slightly darker city roast, subtle floral notes emerge. With a full city roast, it exhibits rich cocoa bean aromas and dark fruit jam notes. Freshly brewed coffee presents pleasant stone fruit flavors, with not only the sweetness of fruit pulp and tannic notes but also a slight bitterness from fruit skin. This natural processed coffee is exceptionally sweet, rich with various sugar-like sweetness, while distinct berry and tropical fruit flavors create a more balanced overall profile. As the coffee gradually cools, sweet citrus flavors begin to emerge, somewhat like sweet limes (a lime variety without the characteristic citrus "mouthfeel" - essentially non-acidic limes!) and floral bergamot. However, the coffee still maintains stimulating flavors - the acidity that highlights various flavor notes. When roasted to full city roast, it showcases blueberry and boysenberry, mango filling flavors, with very prominent dark chocolate syrup notes. When brewed using espresso method, the coffee's flavors become very intense, with particularly rich floral notes, along with acidity and berry aromas, while the aftertaste presents pleasant chocolate bar flavors.

Pour-over: V60 dripper, Fuji R440 grinder setting 3.5, water temperature around 90°C
French Press: Recommended grinder setting 4, water temperature 90°C

AeroPress: Recommended grinder setting 3.5, water temperature 90°C
