The Guji region of Sidamo, located along the Mora Mora River in southern Ethiopia, has long been recognized as the original producing area for forest coffee.
Administratively, Guji belongs to the Oromiya/Oromia region in southern Ethiopia. The local ethnic group is the "Gujii Oromo" people. Coffee cultivation has always been at the core of the highland culture of Oromiya. Within this area, there are several small coffee farms that combine their harvested cherries for processing and export. The washing station handling this is the Ch'ire Ameli washing station in the Nensebo woreda of Guji. Over 800 small coffee farmers deliver their cherries to this processing facility, where they undergo extremely strict screening before being placed on traditional raised African beds for natural sun-drying processing.
The green beans processed by this station achieved an incredible high score of 91.75 and secured third place in the 2015 Ethiopia National Taste of Harvest Competition.

French press: recommended grinder setting 4, water temperature 90°C

AeroPress: recommended grinder setting 3.5, water temperature 90°C
