Panama Coffee Origins
Panama's formal coffee production began in the early 20th century, with cultivation primarily in the country's westernmost valleys and mountains. The majority consists of mild-tasting Arabica coffee beans, with production ratios of 82% Arabica and 18% Robusta varieties. The Chiriqui highlands, situated at altitudes of 2,300-3,500 feet (700-1,070 meters), are recognized as Panama's highest-quality Arabica coffee region. Among these, the most renowned specialty coffees come from the Boquete and Volcan growing regions, which have achieved high ratings in international markets and repeatedly set price records.
Coffee Processing Traditions
It is said that coffee grown in this region features rich, captivating flavors with fruity notes and moderate acidity. This is attributed to the fact that nearly all coffee trees in this area grow under shade trees, and the optimal natural drying method is traditionally used on raised racks for processing green beans. Additionally, all farms in this region employ purely manual processing, using machines only during the wet milling process. Therefore, traditional techniques for seed preservation, agricultural practices, and pulp removal have been passed down through generations, combined with modern advanced technology.
Don Julian Estate Pacamara
Managed by Panama's talented estate owner Hea Burnesky, this operation produces two green bean varieties, both of which have won numerous awards in the Best of Panama competition under different names. One of these is Typica, while the other is precisely the Pacamara from Don Julian Estate. This estate is also located in Panama's Boquete growing region at an altitude of 1,650 meters, featuring excellent regional volcanic soil quality and a superior environment. Furthermore, due to advanced varieties and techniques, the green beans exhibit impressive flavor characteristics.
