Ethiopia's Eight Major Coffee Regions

Ethiopia has eight major coffee-growing regions: Ekempti, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo, and Yirgacheffe.

Yirgacheffe: The Jewel of Ethiopian Coffee

Yirgacheffe is located in the Gedeo region of southern Ethiopia. This region governs two well-known areas: Yirgacheffe and Kochere. Due to the special flavor characteristics and unique style of coffee produced in Yirgacheffe, which is widely loved, it has established its own category in product classification and has always occupied a significant position in the global specialty coffee market.

Yirgacheffe itself is a small town located in the Sidamo province, with three neighboring small regions: Wenago, Kochere, and Gelena Abaya. Because the coffee flavors produced in these areas are nearly identical to those of Yirgacheffe and run parallel in quality, Kochere is also classified within the Yirgacheffe regional category. In November 2009, Ethiopia implemented a new trading and grading system, establishing the Ethiopian Commodity Exchange (ECX), where coffee and other agricultural products are auctioned through this official institution. Besides Yirgacheffe, three additional sub-regions were added: Wenago, Kochere, and Genlena Abaya, indicating that the flavors from these three regions are extremely refined and worthy of separate classification. Since the implementation of the ECX system in 2008, most of the raw coffee beans have been sold through this auction system. However, cooperatives are not subject to this regulation and can directly negotiate, bargain with buyers, and export.

Adado Cooperative: A Pillar of Yirgacheffe Coffee

The Adado Cooperative is one of the 26 unions of the Yirgacheffe Coffee Farmers Cooperatives Union (YCFCU). YCFCU currently represents over 50,000 coffee farmers from more than 300,000 households. Established in June 2002, all 26 unions are located in the Gedeo region of southern Ethiopia, which is a very famous and important coffee-producing region in the country.

Ethiopia: The Eden of Coffee

Ethiopia, in Africa, is known as the Eden of Coffee because it is the homeland of native coffee varieties and a genetic treasure trove for coffee cultivators. It has five major specialty coffee regions: Sidamo, Yirgacheffe, Harar, Limu, and Gimbi. Among these, Yirgacheffe is situated in Ethiopia's highest-altitude coffee-growing region, nestled by mountains and water. The coffee beans produced here have unique flavors that enthusiasts call the "Yirgacheffe taste," characterized by rich jasmine floral notes, sweet citrus aromas, pleasant lemon acidity, and almond sweetness.

Adado Cooperative: Excellence in High-Altitude Cultivation

The Adado Cooperative comes from the Gedeo Zone of Yirgacheffe and is one of the founding cooperatives of the Yirgacheffe Coffee Farmers Cooperatives Union (YCFCU). It is also an important base for the Fair Trade Association in Ethiopia. Adado is situated in lush mountainous areas at high altitudes ranging from 2000 to 2400 meters, where 1,250 farmers work together in coffee cultivation. They use traditional farming methods, interplanting native coffee varieties with enset (Ethiopian banana), which provides shade for the coffee trees, fertilizes the soil, and contributes to the coffee's unique flavor profile. This batch of washed Yirgacheffe Adado processing plant G1 has been rated as G1, the highest grade by ECX evaluation.

• Pour-over: V60 dripper, Fuji R440 grinder setting 3.5, water temperature around 90°C

• French Press: Grinder setting 4, water temperature 90°C

• Siphon: Grinder setting 4, water temperature 90°C-91°C

• AeroPress: Grinder setting 3.5, water temperature 90°C
