Introduction to Yirgacheffe Kokanna Processing Station | Yirgacheffe Coffee Flavor Profiles

The Kokanna Processing Station is located approximately 60 kilometers south of Yirgacheffe, about an hour's drive away, in the town of Gedeb within Ethiopia's Southern Gedeo Administrative Zone. It is situated in Ethiopia's renowned premium coffee bean producing region. The name "Kokanna" in the local language means "pear." Local small-scale coffee farmers deliver their harvested red cherry fruits directly to this processing station for sale. These small coffee farmers typically cultivate less than 2 hectares of land, with coffee grown at altitudes ranging from 1900 to 2100 meters. The main coffee variety is the local unique Heirloom (native indigenous varieties). The Kokanna Processing Station has 80 natural-drying African beds. Due to the high altitude temperatures (15-25°C), washed coffees require a longer drying time.
FrontStreet Coffee Recommended Brewing Parameters:
Pour-over: V60 dripper, use Fuji R440 grinder at setting 3.5, water temperature around 90°C
French Press: Recommended grinder setting 4, water temperature 90°C
Siphon: Recommended grinder setting 4, water temperature between 90°C-91°C
AeroPress: Recommended grinder setting 3.5, water temperature 90°C
