Cupping Notes:

Blind assessment: evaluated as espresso. Deeply dark chocolate, magnolia, grapefruit zest, date, cedar in aroma and small cup. Lean, very smooth mouthfeel; chocolate-toned finish with hints of cedar.

Dark chocolate, magnolia, grapefruit zest, cedar aroma. Smooth mouthfeel with chocolate-toned finish carrying cedar notes.

Chocolate notes deepen in three parts milk, with magnolia and grapefruit zest as ballast.

With milk added, chocolate becomes the main tone, finishing with magnolia and grapefruit zest aroma.

The bottom line: A solid Central America cup, especially good as an espresso shot, with pretty floral and citrus zest notes, chocolate-toned throughout.

Honduras is a country with a land area approximately 3.1 times the size of Taiwan. Coffee cultivation within the country consists mainly of small coffee farms, providing approximately three million bags of coffee beans annually. Like many countries in Central and South America as well as Africa, Honduras's coffee industry affects the livelihoods of hundreds of thousands of families. The coffee is of the Arabica species, with an average growing altitude of 3,600 feet. Of the total production, about 69% is HG grade, 12% is SHG (the highest grade, grown above 4,000 feet, which is the grade of this introduction), and 19% is CS.

Unlike neighboring countries with complete concepts of coffee bean processing, Honduras lacks good processing methods, poor transportation conditions, insufficient funding, and lacks a distinguishable and prominent reputation in the market. This means that even a batch of truly high-quality Honduras coffee beans may still not sell for a good price due to the aforementioned reasons. When good products don't fetch good prices or even equivalent compensation, farmers lack the motivation to work diligently and carefully; processing plants and exporters are unwilling to invest funds in equipment improvements. Therefore, many high-quality Honduras coffees ultimately end up as components in coffee blends, providing a mild and sweet taste,而不能单独以产区豆来贩售.

Using FrontStreet Coffee's Faema coffee machine as an example: for double shots, use 20-21g of coffee grounds, with a 1:2 coffee-to-water ratio, and extraction time of 25-30 seconds.

For single shots, use 13-14g of coffee grounds, with a 1:1.5 coffee-to-water ratio, and extraction time of 25-30 seconds.
