Las Ninfa Estate: A Legacy of Excellence

Ricardo Valdivieso is the fourth-generation heir of his family, who has long been renowned locally for cultivating and processing the Pacamara coffee variety. The estate, named Las Ninfa (Nymph Estate or Fairy Estate), is the sister estate of Santa Leticia Farm. Both estates have very high production and boast beautiful scenery.

The estate was founded in 1870 by the famous politician Francisco Menendez Valdevieso, a native of the region who served as both a general and the President of El Salvador, and was also the founder of El Salvador's education system. For over a century, the estate has been inherited and managed by family members. Ricardo is the great-grandson of the founder Francisco. In addition to coffee and protected forests, the estate also contains many Mayan-era ruins. Ricardo's daughter utilizes these historical sites to operate an eco-tourism lodge at Santa Leticia and provide related activities.

Ideal Growing Conditions

The farm is situated in the small town of Apaneca, near El Salvador's eastern coffee landmark, the Santa Ana volcano, also known as Ilamatepec. El Salvador's mountainous region extends from the north to the east, with all volcanoes being active. The climate and geographical conditions here are extremely suitable for coffee cultivation. Fertile volcanic soil, stable Pacific Ocean sea breezes, appropriate altitude, and distinct rainy and dry seasons make this a paradise for plants.

Pour-over: V60 dripper, Fuji R440 grind setting 3.5, water temperature around 90°C

French press: Recommended grind setting 4, water temperature 90°C

Siphon: Recommended grind setting 4, water temperature 90°C-91°C

AeroPress: Recommended grind setting 3.5, water temperature 90°C
