El Salvador Los Pirineos
El Salvador Los Pirineos is operated by Gilberto Baraona and situated atop the Tepeca volcano in the Usulatan region, surrounded by the cities of Berlin, Santiago de Maria, and Joy. The cultivation began in 1890, and according to family accounts, the original seeds came from Antigua, Guatemala.
The coffee beans here are divided into small to medium batches by different lots and varieties. Currently, the main varieties are Pacas, Bourbon, and Pacamara. Additionally, there is a Procafe program that experiments with coffee trees of original varieties, mutant varieties, and hybrid varieties from around the world.
Los Pirineos is one of the pioneers in El Salvador that built their own micro-processing plants. Producers are still experimenting with drying methods in post-processing. This experimental soaking method involves soaking after pulp and mucilage removal. Such delicate processing preserves elegant vanilla aromas, subtle red berry acidity, and rich nutty sweetness in the flavor profile.

Pour-over: V60 dripper, Fuji R440 grind level 3.5, water temperature around 90°C
French Press: Recommended grind level 4, water temperature 90°C
Siphon: Recommended grind level 4, water temperature 90°C~91°C
AeroPress: Recommended grind level 3.5, water temperature 90°C
