El Salvador: A Land of Volcanic Excellence

El Salvador is the smallest country in Central America, geographically situated adjacent to Honduras, Guatemala, and the North Pacific. It boasts breathtaking volcanic groups and features highland terrain with an average elevation of 650 meters.

Finca Santa Teresa: A Heritage of Excellence

El Salvador's Finca Santa Teresa is operated by the Batres family, who have nearly 200 years of history. They particularly use hot spring water to process the depulping and fermentation of green beans, thus creating a coffee with口感 and aroma that differs from typical Salvadoran production. The producer channels water from hot spring sources located above the finca into six tiered hot spring pools at different elevations, arranged from high to low. When the hot spring water reaches the sixth pool, its temperature drops to approximately 32-34°C. The producer then uses this cooled hot spring water to meticulously process the coffee—a rare processing method.

Finca Santa Teresa: Paradise in the Highlands

Finca Santa Teresa, located in high-altitude regions, possesses rich black volcanic soil and simultaneously receives the nourishing influence of both Pacific and Atlantic climates. These advantages contribute to exceptional coffee quality. It is situated in the Santa Clara production region near the Panama-Costa Rica border. The finca owners, Juan Pablo Berard and his daughter Maria Luisia, jointly operate the 100-hectare coffee farm, preserving 25 hectares as primary forest for wildlife habitat. Because it is nestled within a series of beautiful valleys and ridges, it creates diverse microclimates, giving each micro-batch its unique personality. Coffee growing plots are separated by natural vegetation, streams, or extensive primary forests. Squirrel monkeys and over 600 bird species frequently appear in the FST area.

Environmental Stewardship and Social Responsibility

Adjacent to the farm is La Amistad International Park, designated as a World Heritage Site by UNESCO and now jointly managed by Panama and neighboring Costa Rica. FST employs environmentally friendly cultivation and processing methods, where all waste materials related to the production process are recycled as fertilizer or used as fuel sources for coffee drying. Water is sourced from local streams and has been permitted by Panama's local environmental protection authorities. FST employs 20 full-time staff, which increases to approximately 100 during harvest periods. Panama's labor rights standards are among the highest in Central America.

Additionally, FST provides free meals, medical care, accommodation, transportation, utilities, and education for all employees. FST absolutely does not use child labor. The farm has a school for employees' children, employing teachers who cooperate with non-governmental organizations (NGOs). FST also provides school bus assistance to help children commuting to school in the Volcan area. They are also consistent winners in Best of Panama competitions.
