The spicy aftertaste is long-lasting, with a sweet mouthfeel and rounded texture that gives a Middle Eastern milk tea sensation lasting for quite some time. The cup bottom residue has malt sweetness. Medium-roasted Yemen Mocha will continue to develop changes, so it's recommended to brew 7-14 days after roasting for the best complex wild fermented flavors.

The Importance of Coffee Bed in Pour-Over

The condition of the coffee bed in pour-over brewing cannot be ignored - this must be emphasized! 15g coffee grounds, Fuji Mini Mill ghost tooth blade grind setting 4, V60 filter cup, 88-89°C water temperature. First pour 30g water, bloom for 25s, pour to 104g then stop. Wait until the water level drops to half before pouring again. Slowly pour until reaching 220g total, avoiding the last 5g. Water-to-coffee ratio 1:15, extraction time around 2:00 (counting starts after bloom pour completion).
