The Kochere Region

Before discussing Chelelektu, let's first talk about the Kochere region: Under the ECX regional classification system*, Kochere is one of the four sub-regions of Yirgacheffe (namely Yirgacheffe, Wenago, Gelena Abaya, and Kochere). Administratively, the Kochere region covers two Woredas: Kochere Woreda itself and Gedeb. Kochere and Gedeb form two major pillars at the southern end of the greater Yirgacheffe region, one to the west and one to the east. However, Gedeb was historically an independent Woreda separated from Kochere, so it's not surprising that they're classified under the same region. We treat Gedeb as an independent micro-region, where Worka Kebele within Gedeb Woreda has been increasingly prominent and gradually trending toward independent recognition.

Chelelektu: The Heart of Kochere

Today's largest town, village, or settlement in the Kochere region is Chelelektu. Chelelektu is located approximately eighteen kilometers southwest of Yirgacheffe town in a straight line. Starting from Yirgacheffe town and heading south, the elevation continuously climbs until reaching a three-way intersection. Taking the right fork leads toward Chelelektu, while the left fork heading southeast leads to Gedeb and Worka. Chelelektu is a rather large settlement, hardly inferior to Yirgacheffe town itself. There are quite a few batches named after Chelelektu—generally, processing plants near Chelelektu might be called Chelelektu. In fact, Chelelektu town has two processing plants. This batch we've introduced comes from the Mestawot Asefa processing plant, located slightly farther north from the town center, even farther than Beloya.

Meticulous Natural Processing

The Chelelektu processing plant's meticulous natural processing method is eye-catching in cupping sessions. The thickness of coffee cherry layers on drying racks is properly controlled, with different breathable materials used as the base layer for natural drying racks according to different drying stages. During the drying process, intensive manual removal of defective and underripe beans is performed, using movable racks that can be adjusted according to sunlight and weather conditions for optimal natural drying operations. The result of 15-21 days of continuous careful attention is charming, uniformly colored dried berries with high-altitude, clear jasmine flower aromas, featuring passionate, rich mixed juice and wine notes—a captivating natural Yirgacheffe!

Brewing Method:

Use 30g of water for a 30-second bloom, then pour water to 125g. After the water level drops by half, continue pouring to 225g. Total extraction time: 2 minutes.

Flavor Profile

Yirgacheffe Chelelektu Flavor Description: Lemon, citrus, and berries, with refreshing lemon notes in the finish. The mouthfeel is relatively smooth and gentle.
