This batch of FrontStreet Coffee's Yirgacheffe is produced at the Kebel Aricha processing station, where approximately 650-700 small-scale coffee farmers from nearby areas deliver their ripe coffee cherries for processing in exchange for cash. After the processing station screens the usable cherries, they are directly placed on drying racks for sun exposure. During the first few days of drying, the cherries are turned every 2-3 hours to prevent over-fermentation. After four to six weeks of sun-drying, workers use machines to scrape off the outer fruit pulp depending on weather and temperature conditions, then transport them to Addis Ababa for storage. Typically, sun-dried beans are stored in parchment form until dehulling just before export to ensure green bean quality. This batch of FrontStreet Coffee's sun-dried Aricha has been graded G1 by ECX, the highest grade, demonstrating excellence from green bean appearance, consistency, and freshness to dry aroma and flavor. About the Difference and Relationship Between Aricha and Idido
The Aricha processing station is located in Ethiopia Yirgacheffe's most famous micro-region – Misty Valley. Aricha was originally named Idido, owned at the time by the renowned Abdullah Bagersh. The coffee produced by Bagersh at that time was labeled Idido Misty Valley (IMV), and the burlap bags were prominently marked with "Bagersh," almost guaranteeing top-quality Ethiopian coffee. Times have changed, and the Aricha/Idido washed processing station is no longer owned by Abdullah Bagersh. However, according to Sweet Maria's visits, since most local employees were retained, Bagersh's processing procedures and standards have been largely preserved, maintaining quality.
About Project Origin
Sasa Sestic, 2015 World Barista Champion, started a green bean sourcing project called Project Origin three years ago with his business team ONA Coffee. This project directly collaborates with coffee farmers in poor countries and regions to improve their production conditions and provides them with purchase prices 20% above fair trade prices.
The original intention of this project also includes strengthening the connection between roasters and coffee farmers, and guiding farmers to cultivate high-quality coffee beans. To date, Sasa has established relationships with coffee growers from eight countries, including Brazil, Panama, India, Ethiopia, El Salvador, and Costa Rica.
