Introduction

Kochere is located in the Gedeo region of southern Ethiopia. This area governs the relatively well-known Yirgacheffe and Kochere regions. Because the coffee produced in Yirgacheffe has special, unique flavors and is widely loved, it forms its own category in product classification and has always held a place in the global specialty coffee market.

Yirgacheffe itself is a small town located in the Sidama province, with three neighboring small producing areas: Wenago, Kochere, and Gelena Abaya. Because the coffee flavors produced are almost on par with Yirgacheffe, Kochere is also classified under the Yirgacheffe region. In November 2009, Ethiopia implemented a new trading and grading system. In addition to Yirgacheffe, three sub-regions were added: Wenago, Kochere, and Genlena/Abaya, indicating that the flavors of these three regions are extremely delicate and can be further subdivided.

Kochere is a small producing area located about 25 kilometers southeast of Yirgacheffe. The harvested coffee beans come from local small-scale coffee farmers, forming a collective of numerous individual small coffee farmers. These small farmers have an average coffee cultivation area of about 1 hectare, with planting altitudes of approximately 1800-2000 meters. The main coffee varieties are a mix of Typica and Heirloom (local native varieties). Because this region has relatively advanced green bean water processing equipment, it has always demonstrated high-level performance in the field of washed processing, praised for its clean sweetness with complex notes of honey and citrus.

The main local production model involves small coffee farmers directly delivering each harvest of red cherries to nearby cooperative washing stations for unified processing. Ethiopia introduced washed processing technology in the 1970s, and currently the Kochere region primarily uses washed processing for its green beans. After the washing plants screen and grade red cherry-colored coffee fruits, they directly remove the pulp for washed fermentation. After washing, the parchment green beans are placed on racks to naturally dry in the sun. When the humidity reaches 12% or below, they are directly sent to the Ethiopian Commodity Exchange (ECX) warehouse in Awassa. Cupping grading and quantity are typically conducted, and washed beans are usually stored in parchment form until hulling is performed before export.

This batch of Kochere has been rated as G1, the highest grade by ECX. From the appearance of green beans, consistency, freshness to dry aroma and flavor, it is quite excellent. The aroma performance is very rich, carrying the regional characteristics of Yirgacheffe, emitting an elegant and captivating flower-like perfume fragrance. Floral notes, bright citrus fruit acidity, lemon, berries, and honey's sweet and sour aroma emerge. Jasmine, orange, caramel, grape, vanilla, honey, and floral notes create a clean and balanced mouthfeel, with a lingering, lively, and varied fruity sweetness in the aftertaste.
